Product Description
Pale straw yellow colour, with shades of green and gold. On the nose, there is a bright, aromatic and pungent aroma reflecting the influence of flor yeast – a lightly saline character with notes of bread dough, almonds, olives and dried apples. The wine is dry and fresh on the palate, with a crisp and persistently savoury finish.

Origin Text | The Don Fino is produced from Palomino grapes grown in Sandeman's own vineyards located in the best areas of the Jerez demarcated region. Only vines with a lifespan of 30 years or more survive in this hot, arid climate where temperatures routinely rise to 38°C - their old root systems are capable of seeking out water several metres underground. The ‘albariza’ soils here are composed of 80% chalk as well as some magnesium and clay. Channels are often dug into the soil between the vines to capture and retain rainwater. This soil type is especially good for growing grapes destined for Fino sherry – the palest, lightest and driest of sherries. |
